The BEST BANANA BREAD is so easy.

Difficulty: Easy
Instructions

Things You'll Need:

  • Loaf pan (large for one loaf, or 3 mini's
  • Shortening for pan or Pam spray
  • Measure cup, medium bowl
  • Teaspoon measuring spoon
  • 2 eggs
  • 1/2 half cup butter or margarine spread
  • 1/2 teas. soda
  • 1 Teaspoon salt
  • 1 Cup mashed very ripe bananas. (One large or two medium sized)
  • 1-1/2 Cup flour
  • 1 Cup sugar
  • 1/2 Cup sour cream
  • 1 Teaspoon Vanilla
  1. Step 1

The mixing can be done with an electric mixer, or by hand.
Mash banana well if doing by hand.
Pre-heat oven to 350 degrees. Place all the dry ingredients into a mixing bowl big enough to hold the flour and salt and baking soda.
Place softened butter, sugar, eggs into a large mixing bowl. Blend till well mixed, a soft frothy look. Then add the sour cream and bananas. Mix till well blended.

  2. Step 2

Next mix the flour, soda, and salt throughly. A fork will do fine for that step. Add the flour mixture to the blended banana mixture and add the VANILLA last. Blend again a minute or so with a spoon or the mixer on low speed.

Spray the pan with Pam or rub with shortening that is on a paper towel for ease and not greasy fingers. It is better to use a shortening with no salt for this coating. Like Crisco.

  3. Step 3

Now that all is mixed and the pan readied, pour the batter into the pan or pans. Tap the pan lightly on the counter to release any air bubbles.
Place in center of pre-heated oven and bake for 1 hour. I check at about 55 minutes. If you know your oven and its average temperature, since many vary by size and style or age, then you will not over cook your bread.

Tips & Warnings
  • You may add nuts to this, pecans or walnuts are good.
  • The allergies to nuts that many people have I try to watch out for if giving it away so nuts are not usually in those I give away.
  • Wrap the slightly cooled bread after removing from pan to keep it moist. It can be wrapped in foil and frozen for a great moist breakfast bread for another day. If you hurry before everyone smells it cooking.
  • Let the bread cool slightly before removing from the pan onto a cloth towel. I like to use towels since they absorb any sweating the bread may have done while in the pan. Cool long enough it doesn't crumble when slicing. Slice and serve or wrap for later.
