How to Make Nut Bread With Marmalade Glaze!

The marmalade in this bread and in the glaze makes a special treat for marmalade lover. This recipe makes two eight inch loaves.

Instructions

Things You'll Need:

  • 2 1/2 cups flour
  • 1/3 cup granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup chopped walnuts
  • 1 egg, slightly beaten
  • 1 cup orange marmalade
  • 1 cup orange juice
  • 3 tablespoons olive oil
  • 2 tablespoons more marmalade for glaze
  • 2 tablespoons more orange juice for glaze
  1. Step 1

    Heat oven to 350 degrees.

    Butter the pans.

    Mix together the flour, sugar, baking powder, and salt.

    Into the flour mixture, stir the walnuts.

  2. Step 2

    If your marmalade had a lot of large pieces of peel, cut these up.

    Add the beaten egg, orange juice and olive oil to the marmalade.

    Add the egg mixture, all at once, to the flour mixture.

    Stir only until all ingredients are moist.

  3. Step 3

    Pour into buttered pans and bake for approximately one hour.

    Test after about 50 minutes as you would a cake.

    Remove from oven to rack and let rest as you prepare glaze.

  4. Step 4

    If your two additional tablespoons of marmalade have large pieces of peel, chop these very fine.

    Blend together the marmalade and orange juice.

    Brush glaze over warm loaves.

    Cool completely for several hours. Wrap securely overnight.

    Slice. Serve. Enjoy!
