These are so good and you'll never believe how healthy they are for you and LOW IN CARBS! Takes minutes to make and keeps for a couple weeks!

Instructions

Things You'll Need:

  • 1 egg white ( I like Egg Beaters- takes 1/4 cup)
  • 1 tsp. vanilla flavoring
  • 1/2 cup chopped / grinded nuts ( just buy the prepackaged nuts in the baking section at the supermarket)
  • 1 tsp. cinnamon
  • 1/4 cup Splenda
  • 1/4 cup shredded coconut
  • 1/4 cup ground flaxseed ( you can find this on the baking aisle- it's a great source of fiber and has a sweet nutty flavor)
  1. Step 1

    Preheat your oven to 350 and then in a mixing bowl, toss the nuts, coconut, Splenda, and cinnamon together. Make sure to mix well.

  2. Step 2

    Mix the egg white with the vanilla flavoring( or just pour in the Egg Beaters to the nuts mix and then the vanilla). Stir the mixture well.
    The mixture should clump together but not be stiff.

  3. Step 3

    Drop the batter by teaspoons on a nonstick baking /cookie sheet or spray with nonstick spray if your baking/cookie sheet isn't nonstick.

  4. Step 4

    Bake for 8 minutes and remove and let cool for 15 minutes. I like to store these in the fridge, they keep longer and maintain moisture!

Tips & Warnings
  • Mix in your own flavorings for yummy touches! I like Davinchi and Torani syrups that are Sugar Free . My favorites is Hazlenut, Kaluha and Caramel. Add 2 tbsp. to the batter and omit the vanilla.
  • You can also add 1 tbsp. of peanut butter or almond butter for a yummy twist! Mix it in after the egg white step.
  • Add 1 tsp. cocoa powder for a chocolate version
  • Dip the original cookies into Walden Farms pancake syrup for breakfast!
  • Spray a little whipped cream ( Land o Lakes Heavy Cream Sugar Free whipped cream) in between two of the baked cookies and freeze for 20 minutes for a twist on an ice cream sandwich!
  • Omit the nuts from the recipe if you wish and add 1/4 cup extra coconut and /or 1/4 cup extra of Splenda or 1/4 extra flaxseed. Just be sure to equal 1/2 cup of something.
  • If you don't like coconut, add 1/4 cup extra nuts or add extra flaxseed!
  • Add 1 tbsp. your choice of flavor Sugar Free Jello Pudding mix powder like butterscotch, chocolate, banana cream, vanilla, etc. for a yummy twist!
  • Don't overbake! Some ovens may only require 6-7 minutes of bake time depending on how fast they cook.
