Things You'll Need:
- Eggplant
- 1 lb Ground Beef
- 1/4 cup Parmesan cheese
- 2 cups Mozzarella cheese
- 1 large container of Ricotta Cheese
- Salt/pepper
- 1 tbsp Parsley
- 4 cups Tomato sauce
- Olive oil
- 1/2 Onion

Step 1
Begin by brushing the eggplant with olive oil and grilling them up. You can cut the eggplant into strips before grilling or grill them halved or whole. After grilling, cut them into strips (if you haven't already).

Dice the onion and cook up the ground beef and onion together on the stove top. When the beef is browned remove from the pan. While the beef and onion are cooking, mix the ricotta cheese with some salt, pepper, parsley, and one egg in a bowl.

Cover the bottom of a baking pan with some tomato sauce. Layer strips of eggplant on the bottom of the pan. Layer the ricotta cheese over the eggplant, then the ground beef, then some mozzarella cheese and parmesan cheese. Spoon some sauce over the top and repeat until you have as many layers as you like. The top layer should be a layer of eggplant, covered in sauce and mozzarella and parmesan cheese.

Step 4
Cover the pan with aluminum foil and bake for 30 minutes at 360 degrees. Take the foil off for the last 5 minutes and turn the broiler on to get that golden brown cheese.
