Things You'll Need:
- Baking pan
- Aluminum Foil
- Eggplant
- Ground Beef
- Tomato sauce (you can make your own, check out my recipe "Homemade Tomato Sauce")
- Rice
- Garlic
- Eggs
- Bread Crumbs
- Bread
- Salt/Pepper
- Fresh Parsley
- Parmesan Cheese
- Shredded Mozzarella Cheese (or Cheddar Cheese)
- Pasta (linguine)

Step 1
If you are making homemade sauce, get it started before anything else. If using pre-made, move ahead!

Make 1/2 cup of rice. Then cut the eggplant in half and scoop out the insides. Save about a cup of the insides for the stuffing.

Boil the two halves of the eggplant for about 10 minutes to soften them up a little bit. Let them drain for a few minutes after. While these are draining, saute the scooped out eggplant insides that you saved in one tablespoon of butter.

Make the stuffing. Mix about 1 cup of rice with approximately 8 ounces of ground beef, one egg, about 1/8 cup of bread crumbs, one slice of bread shredded, salt, pepper, parsley, minced garlic, sauteed eggplant and parmesan cheese.

Fry up the eggplant halves. Dip each half in an egg wash and cover with bread crumbs. Make sure the oil is hot enough otherwise the eggplant will just absorb all of the oil. Make sure to fry both sides.

When the eggplant is done, remove from the oil and place in a baking pan that you have lined with your sauce. Take the stuffing mix and place as much as you can into each half. Cover with sauce and spread the shredded cheese and some parmesan cheese over the top. Cover with aluminum foil and place in the oven at 400 degrees for 25 minutes. Take the foil off for the last 5 minutes and turn the broiler on to get that golden brown cheese! You may want to cut each eggplant half further because they may be large. ENJOY!
Serve over Pasta (linguine or spaghetti)

on 9/24/2008 I promise you, every time i make this people go crazy! It is delicious, and you can substitute lean ground turkey for the ground beef.
