If you are looking for a healthy recipe for turkey meatloaf that's super easy this one is for you!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 pounds ground turkey
  • 2 granny smith apples
  • 2 celery stalks
  • 2 bunches green onions
  • 2 heaping tablespoons of mango chutney
  • 2 tablespoons canola oil
  • 1 lemon
  • salt and pepper to taste
  • 2 teaspoons chipotle Tabasco sauce
  • 1 small jar apple or mango sugar free preserves
  1. Step 1

Start by peeling and finely dicing the apples, celery and green onions for your turkey meatloaf. Once diced, saute them in a saute pan in the canola oil until tender. Set aside to cool.

  2. Step 2

Place ground turkey into mixing bowl with chutney, chipotle Tabasco, salt pepper, the juice and the rind of one lemon. Add the completely cooled sauteed mixture. Mix turkey meatloaf thoroughly.

  3. Step 3

Press turkey meatloaf mixture into 9x13 lasagna pan or 2 loaf pans and refrigerate for 2 hours to let flavors blend. Make sure it is covered so it doesn't dry out while refrigerated.

  4. Step 4

Remove turkey meatloaf from fridge and top with sugar free apple or mango preserves. Bake in a 375 degree oven for 1 hour. Remove from oven and let it sit for 5 minutes before cutting and serving.
