This is a mouthwatering salad, that will have your guest requesting more and begging for your recipe.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups diced cooked chicken
  • ¼ cup chopped green onion
  • ¼ cup chopped red onion
  • ¼ cup chopped seedless red grapes
  • ¼ cup raisins
  • ¼ cup chopped celery
  • ¼ cup chopped water chestnuts
  • ¼ cup chopped dill pickles
  • ¼ cup finely chopped pecans
  • 2 cloves garlic finely chopped
  • 3 tbsp finely chopped parsley
  • 2 tbsp finely chopped dill weed
  • ¼ cup small cubed Colby Jack cheese
  • ¼-1/2 cup mayonnaise
  • Pita bread or other sandwich bread, or lettuce leaves
  1. Step 1
     

    Gather all needed supplies, having everything out and ready to go makes this a breeze. You will need a cutting board, large bowl, knife, spoon, measuring spoons and measuring cups.

  2. Step 2
     

    Dice cooked chicken into bite size pieces, not so small that your salad will turn to mush. Measure and dump into mixing bowl.

  3. Step 3
     

    Rinse and chop 2-3 green onions, discarding any damaged tips and the bulb of the onion. Measure and place into bowl.

  4. Step 4
     

    Peel red onion, rinse, and discard any damaged parts. Chop, measure and place in the bowl.

  5. Step 5
     

    Rinse grapes discard stems and any damaged parts. Cut grapes into four pieces. Measure and place in the bowl.

  6. Step 6
     

    Measure raisins, cut any large raisins in half and then pour into bowl

  7. Step 7
     

    Rinse celery, cut off ends and any damaged spots and discard. Chop celery. Measure and place in bowl.

  8. Step 8
     

    Drain juice from water chestnuts, rinse and pat dry. Chop water chestnuts and place into bowl.

  9. Step 9
     

    Chop and measure dill pickle. Place in bowl.

  10. Step 10
     

    Finely chop pecans. Measure and pour into bowl

  11. Step 11
     

    Peel and discard any damaged parts of the garlic clove. Finely chop garlic. Measure. Place in bowl.

  12. Step 12
     

    Rinse and cut stems from parsley. Finely chop parsley measure and place in bowl.

  13. Step 13
     

    Rinse and cut stems from dill. Finely chop dill measure and place in bowl.

  14. Step 14
     

    Cut Colby Jack Cheese into bite size cubes, not as large as your chicken pieces, we don't want the cheese to overwhelm the recipe, just add a subtle flavor. Measure and place in the bowl.

  15. Step 15
     

    Gently stir all ingredients in the bowl. You want to maintain the structure of the ingredients not smash or over stir them.

  16. Step 16
     

    Measure and mix in the mayonnaise. Again be gentle when stirring you are more tossing or folding the ingredients together than stirring.

  17. Step 17
     

    Cover and place in refrigerator to chill for a minimum 1 hour. The longer it chills the better the flavor as it gives the ingredients time to blend together.

  18. Step 18
     

    Serve chilled in pita bread or on a bed of lettuce. Makes 4-6 servings.

Tips & Warnings
  • Cut your onion cut side down on wet paper towels and it will capture the juices of the onion, keeping away those dreaded tears.
  • No fresh parsley or dill, just add 1/4 to a 1/2 Tbsp. of dried parsley and dill.
  • If you are not a big fan of garlic you'll want to use less garlic to suit your taste buds.
  • Do not over stir as you will end up with less texture and it will not be as appealing to they eyes of your guest.
