How to Make Excellent Fish Stock!

This stock has many uses and is healthy as well. This recipe makes approximately 3 pints of stock.

Instructions

Things You'll Need:

  • 1 1/2 pounds of fish bones (ask for these at your fish market)
  • 2 tablespoons butter
  • 2 quarts water
  • 1 teaspoon thyme
  • 2 bay leaves
  • 2 cloves of garlic, chopped
  • 2 onions, chopped
  • 6 peppercorns
  • 2 large carrots, chopped
  • 2 outside stalks of celery, with leaves, chopped
  • 1 teaspoon salt
  1. Step 1

    Rinse the fish bones well.

    Place them in a heavy stock pot with the butter and water.

    Cook, stirring, over low heat, for about 5 minutes.

  2. Step 2

    To the pot, add all the remaining ingredients.

    Bring to a rolling boil.

    Turn down heat, cover pot, and simmer for approximately 45 minutes until every bit of flavour has transferred to the liquid.

  3. Step 3

    Strain through a fine sieve.

    Cool and refrigerate.

    Can be kept refrigerated for several days or frozen for later use. Enjoy!
