Things You'll Need:
- 1 1/2 pounds of fish bones (ask for these at your fish market)
- 2 tablespoons butter
- 2 quarts water
- 1 teaspoon thyme
- 2 bay leaves
- 2 cloves of garlic, chopped
- 2 onions, chopped
- 6 peppercorns
- 2 large carrots, chopped
- 2 outside stalks of celery, with leaves, chopped
- 1 teaspoon salt

Step 1
Rinse the fish bones well.
Place them in a heavy stock pot with the butter and water.
Cook, stirring, over low heat, for about 5 minutes. -
Step 2
To the pot, add all the remaining ingredients.
Bring to a rolling boil.
Turn down heat, cover pot, and simmer for approximately 45 minutes until every bit of flavour has transferred to the liquid. -
Step 3
Strain through a fine sieve.
Cool and refrigerate.
Can be kept refrigerated for several days or frozen for later use. Enjoy!
