Things You'll Need:

  • 1 pound salmon, cooked (preferably poached or sauted)

  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 ribs of celery, chopped
  • 3 cloves of garlic, chopped
  • 1 small can tomatoes, randomly cut

  • 2 tablespoons water or fish stock
  • 1 teaspoon oregano
  • salt and pepper to taste
  • 1/4 teaspoon cayenne
  • 1 tablespoon lemon juice
  • 1/2 pound pasta of your choice (I like the sauce on spagetti or other thin pasta)
  • 2 teaspoons butter
  • parsley for garnish
  1. Step 1

Cook the salmon. Cool. Remove any bones or skin. Flake and set aside.

In a heavy saucepan, heat the olive oil and add the onion, carrot, celery and garlic. Sauté for about 5 minutes until onion begins to become transparent.

  2. Step 2

Add tomatoes, and water or stock, oregano and cayenne.

Bring mixture to a slow boil. Salt and pepper to taste.

Turn heat to low and simmer gently for about 10 minutes.

Set large pot of water to boil for your pasta.

  3. Step 3

Stir frozen peas, and salmon into the sauce.

    Cook your pasta.

Meanwhile, add lemon juice to the sauce and continue to simmer until peas are cooked. Adjust seasonings.

  4. Step 4

Drain pasta and toss with butter.

Pile on four heated plates and top with sauce.

    Garnish with parsley Enjoy!
