To Make Pumpkin Pudding – A Pumpkin Recipe

Fall is the perfect time to try a new pumpkin recipe. Here is one for pumpkin pudding that will not only look beautiful when it’s presented, but taste delicious too. Serve with freshly brewed coffee for the adults and ice cold milk for the children. It will be a big hit!

Instructions

Things You'll Need:

  • Oven
  • Double boiler
  • Mixing bowl
  • Six small baking dishes (individual size)
  • Deep pan
  • 1 ½ cups cooked and mashed pumpkin (fresh is best)
  • ¼ teaspoon ginger (spice)
  • ¼ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 3 farm fresh eggs
  • 1 teaspoon sea salt
  • 1 cup of half and half (or fresh cream if you have it)
  • 1 Tablespoon butter (not margarine)
  • 2 Tablespoons molasses
  • ½ cup sugar (I like to use Turbinado sugar)
  • ¼ cup sweetened whipped cream
  • ¼ cup finely crushed nuts (optional)
  1. Step 1

    Preheat your oven to 350 degrees Fahrenheit.

  2. Step 2

    In a mixing bowl, combine the freshly cooked and mashed pumpkin, sugar, spices and molasses. Beat these ingredients until they are well-mixed.

  3. Step 3

    Beat your three eggs, ½ and ½ , and sea salt in a separate bowl. Cook this mixture until it is the consistency of a soft custard. You’ll know it’s reached that stage when the mixture coats a spoon.

  4. Step 4

    Remove the custard-like mixture from the heat. Combine it with the fresh pumpkin mixture.

  5. Step 5

    Divide the pumpkin mixture evenly between the six small baking dishes. Place the baking dishes into a pan of hot water. Bake in the oven at 350 degrees Fahrenheit for about 40 minutes.

  6. Step 6

    Serve the pumpkin pudding by turning each dish out into a bowl, top with the sweetened whipped cream and crushed nuts. It’s a masterpiece!

Tips & Warnings
  • Make sure none of your guests are allergic to nuts before adding them to the top of your pumpkin pudding.
  • This pumpkin recipe takes time and is definitely a labor of love when you consider that you have to cook the fresh pumpkin first, but the taste is well worth the time spent!

on 11/24/2008 This sounds so good! I have made a similiar pumpkin pudding but the custard part is not cooked first. It separates into two layers - custard and pumpkin - when baked. I'm thinking your recipe doesn't do that? Seems like it would be more totally pumpkin pudding. I might like that better. Will have to try it soon! Thanks!
