How to Harvest and Prepare Dandelion Greens

Most of us think of the Dandelion as being an invasive weed, but the Dandelion is actually a vitamin rich herb.. Throughout history the dandelion has been used as a cure all. It’s rich in calcium, iron, magnesium, and essential B vitamins. So if you want to improve your health and well being you should add Dandelion to your diet. Here’s some tips on how to harvest and prepare dandelion greens.

Instructions

Things You'll Need:

  • Dandelion greens
  • Bucket
  • Saute' Pan
  • Extra Virgin Olive Oil
  • Fresh garlic
  • Salt
  • Pepper
  1. Step 1

    Harvest dandelions in a natural setting, such as a field. This is a way to avoid pest control exposure. On the other hand, sow seeds in a garden setting in your yard.

  2. Step 2

    Pick greens is in the morning when the sun is not as strong. Greens tend to wilt if the sun is too intense. Select a clump with new leaves, you want to harvest before there are flower buds. Tender spring green leaves are sweet, older leaves are bitter.

  3. Step 3

    Thoroughly wash the dandelion greens with cool water, remove all brown leaves.

  4. Step 4

    Dandelion Greens recipe servers four:

    Place your sauté pan on the burner and turn the heat to medium high.
    Add 1 ounce of Extra Virgin Olive Oil, when the oil is hot, add your 4 cups of dandelion greens. Next, add 1 tablespoon of chopped garlic.
    Cook at medium high until leaves wilt. Add kosher salt & pepper to taste.

on 1/27/2009 Dandelions greens make a great cold salad too! I'm going to try this warm recipe, cause I sat in front of the 'puter screen for hours eating a giant bag of salted pumpkin seeds.
