How to Make Sweet Potato Pies

Sweet potato pies are a Southern staple to the Thanksgiving menu. Much like pumpkin pie, sweet potato pie offers a smooth and creamy addition to the pie family. For this particular sweet potato pie recipe, you will learn to make make the pie filling as well as a "deluxe suprise" for the topping. This recipe will certainly leave your holiday guests coming back for more.

Instructions

Things You'll Need:

  • 2 to 4 sweet potatoes, peeled and chopped
  • 1 egg
  • 1 stick of butter, divided in half, softened
  • 3/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 cans of sweetened condensed milk
  • 1 bag mini marshmallows
  • Electric mixer
  • 2 pie crusts
  1. Step 1

    Peel and chop the sweet potatoes and place them into a large pot of boiling water. Boil until tender enough to mash.

  2. Step 2

    In a large bowl, beat the egg. Add the boiled sweet potatoes and mash. Add butter and sugar and mix well. Slowly pour in one can of condensed milk, then add cinnamon and nutmeg. Blend with mixer until smooth.

  3. Step 3

    Prepare crust. If using a package crust, prepare according to package directions. Pour filling into the pie crust. You should have enough filling to fill two pie crusts.

  4. Step 4

    Prepare topping. In a large pan, on low heat, melt the remaining half of the stick of butter. Slowly add the bag of mini marshmallows to the melted butter. Stir until all marshmallows are melted. Add the second can of condensed milk to the mixture and stir continuously to avoid scorching. Pour topping over each pie.

  5. Step 5

    Bake pie in a 400-degree oven for 30 minutes. Pie can be served warm or chilled.

Tips & Warnings
  • Place pie pans on a flat cookie sheet just in case the pie spills over.
  • Watch pie closely while it is baking to prevent spills and scorching of the marshmallow topping.
