Make a delicious casserole with pasta, bell peppers, and cheese.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups macaroni
  • 4 Tablespoons margarin (optional)
  • 1 Bell pepper (Orange is best)
  • 5 slices Mozzarella cheese
  • Casserole dish
  • Salt
  1. Step 1

Preheat oven to 225 degrees F. Cook pasta in boiling water with 1 Tablespoon of salt. Cook until tender and tasty. Dice pepper and place in strainer.

  2. Step 2

Pour pasta over pepper in strainer, let drain, but don't rinse, then place in casserole dish, add margarine, and mix thoroughly.

  3. Step 3

Cover contents with cheese slices, being careful not to let the cheese touch the edges of the dish. You may wish to cut one slice into 4 triangles to best fit in a circular dish.

  4. Step 4

Cover dish and place in oven at 225 for approximately 15 minutes or until cheese is completely melted. Take out of oven, uncover, and let cool for 5 minutes.

  5. Step 5

Cut and serve. Serves 4. Bread, fruit, and salads all go well with this main course. Kids and adults all seem to really enjoy it.

Tips & Warnings
  • To keep a bell pepper crisp and tasty, choose one that is firm, wash and cut it immediately, then store in a glass of cold water in the refrigerator. When ready to prepare dish, pour pepper into strainer and rinse with hot water to warm it up before adding pasta.
  • Casserole dish will be very hot after being in the oven, and the cheese can be a bit stringy. To make cleanup easier, try to avoid letting the cheese hit the casserole dish as you are serving.
