How to Make a Smoke Flavor Chicken Spread

When I cook chicken on the grill, I use at least three whole ones. Why waste a good fire? I will put the 2 extras up for later or I will make some chicken spread.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Chicken White meat (2 breast and 2 wings)
  • Mayo
  • Bread and Butter Pickles Spears
  • 1 small Onion
  • 1 clove of garlic
  • Black Pepper
  • Grill
  • Small bag of Hickory chips
  • Mixing Bowl
  • Food Processor
  1. Step 1

    I like to make this for gatherings. I will use it as a dip w/crackers, sandwiches or make some roll ups. It always seems to be a hit. If your guest won't leave you any, make a little extra for yourself.

  2. Step 2

    Prepare your fire with wood or charcoals. Soak two hands full of Hickory Chips in some water for an hour or until your coals are ready.
    Sprinkle the chips over the coals and watch the smoking action. Place the chicken parts on the grill around the outer edges of the fire and cover. Open the vents about half way. Check the meat about every 15 minutes flipping and rotate.

    Debone the chicken

    After the chicken is cooked, let it cool and remove the skin and bones. Place the meat into the food processor and finely chop it up. Pour the processed meat into a mixing bowl.

  4. Step 4
    Onion & Garlic

    Take the peeled onion and cut into fourths. If you do not like that much onion use only half. Use one clove of garlic and four or five B&B pickle spears and add all into the food processor. Chop until you get the desired constancy. Add to the mixing bowl.

    Mix in some Mayo until you get a paste. Pepper to your liking. Cover and chill.

Tips & Warnings
  • You can add a little B&B juice to the mixture
  • Miracle Whip can be substituted for Mayo
  • Dark meat can be used or mix it up
