I just made this tonight for all of my girlfriends. They really loved them. This is a very healthy and simple recipe.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 lbs potatoes cut into french fry-size strips (i used 4 good-sized potatoes)
  • 2 lbs carrots, peeled and cut into strips
  • 2 1/2 tablespoons olive oil
  • salt
  • pepper
  • 3-4 cloves of garlic
  1. Step 1

    Preheat the oven to 425 degrees

    Wash the potatoes and cut into strips the size of your liking.

  2. Step 2

    Peel the carrots and cut into strips the size of your liking.

  3. Step 3

    Mince 3-4 cloves of garlic

  4. Step 4

    Dump everything into a large bowl (it needs to be very deep) and mix with your hands.

  5. Step 5

    Pour in about 2 tablespoons of the olive oil and mix with your hands

  6. Step 6

    Grease two lipped baking sheets with the remaining olive oil

  7. Step 7

    Evenly place the veggies on the baking sheets and baked in oven for 45 minutes, turning over once and changing the position of the racks halfway through.

  8. Step 8

    Take out, put in a paper-lined bowl or basket and sprinkle with salt and pepper
