Stuffed Peppers are a great main dish for vegetarian Thanksgiving dinner. Simply follow your favorite stuffed pepper recipe. Wherever meat is called for, substitute vegetarian or vegan sausage, beans, or tofu. Select bright, colorful peppers for a dazzling dish. -

VEGETARIAN CASSEROLE
Vegetarian casserole is super easy to make and can be served to your entire Thanksgiving dinner party. Select your favorite casserole recipe and substitute soy burger or meatless sausage where meat is called for. If serving as a main dish, be sure to make enough vegetarian casserole to serve also as a side dish.

on 9/2/2008 Great article! I don't know anyone who is a vegetarian but this is great advice for anyone who might want to incorporate some vegan dishes into their diets. I thought about it but also had the idea was guilty of thinking the diet consisted of nothing but side dishes or soup. Thanks for the article!
