There are so many dishes out there that you can make with chicken. But sometimes its easy to get in the same ol' rut. If you're looking for some new chicken ideas, here's a good one to try. This can also be made in the crock pot.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 chicken breast
  • 3 cups of rice
  • 3-4 cans of nacho cheese soup
  • 2 cans of rotel tomatoes with cilantro and lime
  • Tony Cachere's
  • 1/4 cup of beer (preferably light beer)
  • Casserole dish
  1. Step 1

To prepare, preheat oven to 350 degrees.
Mix sauce right in the casserole dish.
Add the cheese soup, rotel tomatoes, and the beer. Mix thoroughly. Add Tony Cachere's to taste.

  2. Step 2

Add chicken to the cheese mixture. Make sure the chicken is completely covered by the sauce. Cook time is determined by the thickness of the chicken breast. Usually, it should take about 30-45 minutes.
Make a small slice in the largest chicken breast. If there is a pink liquid, it is not quite ready. Once that liquid is clear, your chicken is done.

  3. Step 3

In the meantime, cook the rice according to direction. Generally, 3 cups of rice, and 4 cups of water, for about 20 minutes... should feed a family of 4.

Once chicken is finished, serve over rice! And, enjoy.

Tips & Warnings
  • A good side dish for this is green beans.
  • You can also cook this dish in the crock pot. Simply add the sauce and chicken to a crock pot and cook for 4-6 hours.
