After a successful growing season, here's a tasty dish I made from a big zucchini!

Instructions

Things You'll Need:

  • zucchini
  • bread crumbs
  • garlic
  • parmesan cheese
  • olive oil
  • margarine
  1. Step 1

    Preheat oven to 400. Wash the zucchini thoroughly because I don't peel the skin off! Cut off the top and bottom of your zucchini, then slice it from top to bottom. Using a spoon, on each half, carve out a "boat" leaving approximately 1/2 inch before the skin - set aside.

  2. Step 2

    In a separate bowl, mix bread crumbs, minced garlic, chopped up insides of the zucchini, parmesan cheese, and margarine or olive oil. Amounts of each item vary based on the size of the zucchini, and how stuffed you want it to be. Microwave for 1-2 minutes until everything is mixed into a nice stuffing consistency.

  3. Step 3

    Place both zucchini halves onto a baking sheet with a little olive oil drizzled on the bottom so it doesn't stick. Scoop out the stuffing mixture into both zucchini boats. Add a little more parmesan cheese (or you can substitute mozzarella) on top to finish.

  4. Step 4

    Bake on 400 degrees for approximately 30-40 minutes. You want the zucchini boat to be soft.

Tips & Warnings
  • When cooking, poke at the zucchini with a toothpick - if it goes right in it's done.
