How to make this vegetable medley to compliment a variety of dishes.

Instructions

Things You'll Need:

  • Onions
  • Carrots
  • Celery
  • Garlic (if desired)
  • Extra Virgin Olive Oil
  • Salt/Pepper
  1. Step 1

    Mirepoix, pronounced "Meer-pwah" and sometimes called the "trinity" is a combination of vegetables that can be used in a variety of dishes. Begin by chopping onions (50% ratio) Carrots and Celery (25% each ratio). Toss with salt and pepper to taste. Add chopped garlic if desired.

  2. Step 2

    To roast, toss with olive oil and place in a 400 degree over for 15 minutes or until vegetables are crisp tender. To sauté, heat the olive oil in a hot sauté pan. Sauté vegetables, stirring often until tender.
    Your favorite herbs can be added such as thyme, basil, rosemary, etc.

  3. Step 3

    Now your Mirepoix can be added to meatloaf, soups, stews, casseroles, spaghetti, stocks, sauces, greens, cabbage, omelets and much more. Let your creativity be your guide.

Tips & Warnings
  • If you're making stock, the vegetables can be chopped 1 or 2 inches in size since they'll be strained out of the stock and discarded. Otherwise chop the vegetables in a fine dice. If you like more onion or more carrots or more celery adjust the proportions to your liking. There are not hard and fast rules here. Try roasting the onions and garlic in their skins til tender then peeling them and adding the roasted/sauteed carrots and celery.
