Things You'll Need:
- 2 squares bitter chocolate
- 1/2 cup sugar
- 3 tablespoons cornstarch
- 2 cups milk
- 3 egg yolks
- 2 teaspoons vanilla
- 1/8 teaspoon salt
- 3 egg whites (for meringue)
- 3 tablespoons granulated sugar (for meringue)

Step 1
In the top of a double boiler, over simmering water, melt the chocolate.
As the chocolate is melting, mix together the cornstarch, sugar, salt, milk and egg yolks.
Stirring gently, add the cornstarch mixture, slowly, to the melted chocolate -

Continuing to stir gently, cook the mixture over low heat until it is thick.
Remove from heat. Stir in the vanilla. Cool completely, stirring occasionally to prevent skin from forming. -
Step 3
Heap filling into cooled crust.
Heat oven to 425 degrees.
Make meringue by beating the three egg whites until they begin to stiffen. Continuing to beat, add the three tablespoons of sugar, beating until whites are stiff and stand in peaks. -
Step 4
Spoon onto chocolate filling and spread right to the crust edge to prevent shrinkage.
Place high in the hot oven and bake for 2 to 3 minutes or until meringue is lightly browned.
Remove from oven. Cool. Enjoy!
