Instructions

    • 1

Blanch the strawberries to retain their bright red color. Drop a few strawberries at a time into a large pot of boiling water. Boil for about 15 seconds before removing with a slotted spoon. Set aside to cool.

    • 2

Mash strawberries and with a potato masher. Mix in four sulfur-based tablets to remove chlorine from the mixture and inhibit the growth of mold. Add one pound of sugar to every pound of strawberries you are using. Mix the strawberries together with about 15 pints of water and set aside.

    • 3

Dissolve wine yeast into warm water. After the yeast dissolves, add the mixture to the mashed strawberries. Leave the mixture in an open container at about 70 F for 3 to 4 days. Occasionally stir the strawberry mixture.

    • 4

Line a large colander with cheesecloth. Place the colander over a pot or bowl. Pour your strawberry mixture into the pot, straining any particulates through the cheesecloth. Ferment the wine for five to ten days.

    • 5

Pour into bottles and keep at temperatures under 60 F. Strawberry wine does not age well, so you should drink it as a new wine as soon as you can.

Tips & Warnings

  • Make sure you clean the strawberries before mashing so you do not introduce any mold or dirt into your wine. You may need to mash and ferment the berries in batches if you do not have containers large enough to hold all 30 pounds of strawberries at once.
