How to Make Midnite Magic Shrimp And Egg Oriental

Midnite Magic Shrimp And Egg Oriental is one of those magical dishes that only takes 5 minutes to make and that can be transformed magically into dozens of different presentations. Since it combines shrimp with hard boiled eggs, it is very cost effective, even at the cost of shrimp today. Use a good quality frozen, peeled, cooked shrimp and thaw them in the refrigerator for safety.

Instructions
  1. Step 1

    Place 3/4 cup good quality mayonnaise in a small bowl

  2. Step 2

    Add 1 teaspoon wasabi powder and stir into the mayo until it is well mixed

    Taste and add more wasabi if you want a sharper taste to the dressing

  3. Step 3

    Mix in 1 teaspoon toasted sesame oil
    1 tablespoon soy sauce
    1 tablespoon marsala or sherry wine
    1 teaspoon Worcestershire sauce
    1 tablespoon sweet relish
    2 tablespoons finely minced celery
    stir well and taste. Adjust the seasonings to your taste.

  4. Step 4

    peel one dozen hard boiled eggs and cut into large chunks. Mix with one pound peeled cooked shrimp

  5. Step 5

    Add the dressing to the egg and shrimp mix. Toss gently to coat the eggs and shrimp without breaking up the eggs too much. This is the base of your dish. It will serve 6 to 8 hungry people.

  6. Step 6

    Now comes the Midnite Magic part. You can serve this base in dozens of different ways.....

    On crusty bread it makes a great sandwich
    Stuffed into a tomato or half an avacado it is a wonderful salad or brunch.
    Place it on a lettuce leaf and roll it up for a lettuce wrap
    Mix it with cold pasta or rice for a terrific pasta or rice salad.
    Fold in cold bite sized chunks or slices of potatoes for a filling and unusual potato egg shrimp salad
    Little dollops on crackers are an instant appetizer.

Tips & Warnings
  • You can add other items to the base.... like water chestnuts or tiny tomatoes or chopped bok choy. Use your imagination and try different things.
  • Keep it cold... it will spoil quickly if it is at room temp.
  • It is very rich... so a little goes a long way.
