Quality chocolate is chocolate with a high cocoa content that lingers in your mouth after you have eaten it. The texture will be silky not grainy. Low quality chocolate will dissolve in your mouth quickly and the flavor will disappear almost right away. Some high quality chocolates are Valhrona, Cargill and Lindt.

Low quality chocolate contains alot of sugar. High quality chocolate is mostly cocoa. Start shopping for chocolate with a high cocoa content 75 % or more.

But if you eliminate the low quality chocolate from your pantry and only have the high quality available, you will realize that high cocoa chocolate gives you the taste you desire and lets you control your intake.
