These muffins are full of healthy ingredients.

Instructions

Things You'll Need:

  • 1/2 cup all purpose flour
  • 1/4 cup whole-wheat flour
  • 1/4 cup soy flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup wheat germ
  • 1 cup raisins
  • 1/4 cup sesame seeds
  • 1/4 cup sunflower seeds
  • 2 tablespoons softened butter
  • 1/4 cup demerara sugar
  • 1 egg
  • 2 teaspoons grated orange peel
  • 1/4 cup orange juice
  • 3/4 cup plain yogurt
  1. Step 1

    Heat oven to 425 degrees.

    Butter muffin pans.

    Mix together the three flours, the wheat germ, the baking powder, baking soda and salt. Set aside.

  2. Step 2

    In a large bowl, cream together the butter and sugar.

    Add the egg, orange peel and orange juice. Blend well.

    Add the seeds and raisins. Blend.

  3. Step 3

    Add the dry ingredients, alternately with the yogurt, to the creamed butter mixture. Mix only until blended.

    Spoon into muffin pans. Bake for approximately 15 minutes.
