Blend: 1 16 oz. can pimientos/1 fresh sweet pepper, 2 Tbs. sesame seeds, 1 Tbs. nutritional yeast flakes, 1 cup cashews, 1/2 lemon juice, 1 1/2 tsp. salt, 1 tsp. onion, 1 tsp. garlic powder and 1 1/2 cups water together in blender.

  3. Step 3

Mix blended mixture with cooked macaroni in mixing bowl, pour into casserole dish and sprinkle with bread crumbs. Bake at 350 degrees for 30-40 minutes.

Variations: chopped olives, steamed broccoli, browned tofu etc.can be added to macaroni.Mixture can also be used on vegetables or homemade pizza.

Tips & Warnings
  • Whole wheat macaroni is different in nature to regular macaroni and should not be cooked until too tender so that it does not break up easily. Macaroni should still be slightly firm after boiling. Closely monitor while boiling to avoid over cooking.
  • If you cannot find pimientos sweet peppers would do just fine. To make extra pimiento cheese spread, double up on ingredients. Mixture can be kept for up to a week in refrigerator.
  • Because ingredients are in their natural state I advise to make only as much as can be used in a maximum two day period to prevent spoilage.
