How to Make Your Own Pesto!

There is nothing quite as delicious as pasta with home-made pesto. This recipe serves four.

Instructions

Things You'll Need:

  • 2 1/2 cups of fresh basil, tightly packed
  • 2 large cloves of garlic
  • 1/4 cup toasted pine nuts (these are actually optional but do add flavour)
  • 1/2 cup grated parmesan
  • 1/3 cup olive oil
  • salt and pepper to taste
  1. Step 1

    In a blender combine the fresh basil, the grated Parmesan, the pine nuts, the garlic and a pinch of salt.

    Blend, turning power on and off, until a paste is formed. Occasionally scrape down the sides.

  2. Step 2

    Running the blender at a low speed, slowly add the olive oil.

    Continue to blend until the paste is smooth.

  3. Step 3

    Taste and adjust salt and pepper if necessary. Blend again.

    This pesto will keep several for several days and can be frozen for several weeks.

    Warm it up and serve with your favourite pasta. Enjoy!
