How to Make an Easy Vegetarian Lasagna

Making vegetarian lasagna is easier, faster, and healthier than making meat-based lasagna. Plus, you save money by not buying meat. And many will agree, vegetarian lasagna also tastes just as good (if not better).

Instructions

Things You'll Need:

  • 8 oz of no-boil lasagna pasta
  • 26 oz jar of chunky vegetable pasta sauce
  • 16 oz container of ricotta cheese
  • 8 oz of mozzarella cheese
  • baking dish, 8x8 or near size
  • lid or foil for baking dish
  1. Step 1

    Preheat the oven to 425 degrees. You may need to adjust this temperature slightly because of your area's altitude, age of your oven, or type of baking dish used.

  2. Step 2

    Spread a thin layer of chunky vegetable pasta sauce on the bottom of the baking dish. I personally like Super Vegetable Primavera Pasta Sauce from Ragu. It has chunky vegetables, which helps give the lasagna a meaty quality to it.

  3. Step 3

    Place a layer of lasagna pasta over the sauce. Break the pasta into halves to get them to fit, if necessary. Remember: no boiling of the pasta is necessary if you are using a no-boil brand. I've had the best success with Mueller's brand of lasagna.

  4. Step 4

    Spread a layer of ricotta cheese over the hard pasta. Use up half of the container.

  5. Step 5

    Spread a generous layer of chunky vegetable pasta sauce over the ricotta cheese. Make sure that no pasta is exposed; cover it with sauce.

  6. Step 6

    Thinly slice or grate the mozzarella. Layer about half of it on top of the pasta sauce.

  7. Step 7

    Repeat steps 3-6.

  8. Step 8

    Cover the baking dish, using either a lid or foil.

  9. Step 9

    Slide the dish into your preheated oven and set the timer for 40 minutes.

  10. Step 10

    After the 40 minutes are up, uncover the baking dish. Set your timer to bake the vegetarian lasagna for an additional 15 minutes. You may adjust this time according to your preference of a gooier cheese topping (less baking time) or a crustier one (more baking time).

  11. Step 11

    When the cheese toping of the vegetarian lasagna is to your satisfaction, turn off the oven. Use oven mitts to take the lasagna dish out.

    Let the vegetarian lasagna cool a few minutes for easier dish-to-plate transfer. And that's it! Enjoy!

Tips & Warnings
  • Top your lasagna with Parmesan cheese to add additional flavor and texture.
  • Experiment with pasta sauces to add variety to your lasagna.
  • Sauté or boil fresh vegetables for a personal touch.
  • An additional lasagna layer can be added if you have a deeper dish. Be sure to buy extra ingredients.
  • Cottage cheese can be substituted for ricotta cheese.
  • Use caution around a hot oven. Use oven mitts to handle hot dishes and make sure young children are supervised.
  • If this is your first time cooking lasagna or cooking in a new oven or location, check often on the lasagna to ensure it is cooking properly.
