How to Stuff Bell Peppers

Bell peppers are nutritious and available any time of the year.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 large bell peppers
  • 1 pound ground beef or turkey
  • 1/2 cup chopped onion
  • 1 stalk of celery, chopped
  • 1 clove of garlic, minced
  • Extra virgin olive oil
  • 1 can of Rotel
  • 2 cups of cooked rice
  • 1 cup of seasoned bread crumbs
  • Salt, pepper
  • Grated cheddar
  1. Step 1

    Cut each bell pepper in half, from top to bottom and remove all seeds. Par boil until slightly tender. Remove from water aside to cool.

  2. Step 2

    In pan, sauté the onion, celery and garlic in oil until tender.

  3. Step 3

    Brown the ground beef or turkey, then add the Rotel and simmer with the rest of the ingredients.

  4. Step 4

    Mix in the pre-cooked rice and stuff the peppers.

  5. Step 5

    Place the peppers in a greased casserole pan. Sprinkle with cheddar and seasoned bread crumbs. Bake in a pre-heated 350 degree oven for 30 minutes.

Tips & Warnings
  • Prepared stuffed peppers may be frozen before baking, for future use.
