Things You'll Need:
- ½ pound lean ground beef
- ½ pound ground lamb
- ½ cup uncooked whole grain brown rice
- 1 tablespoon butter
- ½ tablespoon vegetable oil
- 1 cup water
- 6 bell peppers (green or any other kind)
- 1 ½ (8 ounce) cans tomato sauce
- ½ onion
- 1 tomato
- 4 garlic cloves
- salt and pepper to taste (optional; Italian seasoning or basil)

Step 1
Preheat oven to 350 degrees F (175 degrees C).

Place the rice and water in a saucepan, add the butter, and bring to a boil. Reduce heat, cover, and cook for 15-20 minutes.

Chop the onion, garlic and tomato (washed well or organic) and add the ground beef and lamb seasoned with salt and pepper. Cayenne pepper can also be added. Pour in ½ can of tomato sauce. Place into a skillet, add the vegetable oil and cook over medium heat until the meat is browned.

Remove and discard the tops, seeds, and membranes of the bell peppers and wash well. (NOTE: In 2006 the Environmental Working Group named bell peppers as containing the second largest amounts of pesticide residue. If you can‘t afford to buy them organic remember to wash well.)

In a bowl combine the rice and meat and mix well.

Arrange peppers in a baking dish with the hollowed sides facing upward and spoon in equal amounts of the stuffing mixture. Pour the remaining tomato sauce over the stuffed bell peppers.

Step 7
Bake 1 hour in the preheated oven. About 45 minutes into the cooking, coat each bell pepper with sour cream. That is, spread ½ tablespoon of sour cream over each bell pepper. You can skip this step if you don’t particularly like sour cream. It is purely optional.
