How to Make Old Fashioned Southern Potato Salad

In the South, there is no family gathering or picnic that doesn't include potato salad and fried chicken. This is my mother's recipe. Enjoy.

Difficulty: Easy
Instructions

Things You'll Need:

  • 5 lb bag white potatoes (diced)
  • 1 tbsp margarine or butter
  • 6 boiled eggs
  • 2 Celery sticks (diced)
  • 1/2 Green Pepper (diced)
  • 1 tbsp chopped Pimentos (optional)
  • 1/4 onion (diced)
  • 1/2 cup Sweet Salad cubes
  • 1 small jar Miracle Whip
  • Paprika
  • 1 tbsp Sugar
  • Salt and Pepper to taste1
  1. Step 1

    Put a large pot of water on medium heat and bring to a boil. Add the butter and eggs. Let the eggs boil for about 3-5 minutes and remove from water.

  2. Step 2

    Peel potatoes and dice into cube shapes. Add about 1 tsp of salt and the diced potatoes to the boiling water. Let cook until potatoes are soft but not mushy.(about 10 minutes)

  3. Step 3

    While potatoes are cooking, dice the celery, pimentos, onions and bell pepper. Drain the potatoes and let cool. Dice 4 of the boiled eggs.

    Combine ingredients
    Combine ingredients

    In a large bowl, combine potatoes, celery, onions, pimentos, bell peppers and diced eggs. Add Miracle whip and using a mixing fork mix the ingredients well with the miracle whip.

  5. Step 5

    Transfer to serving bowl. Take the remaining two eggs and slice them. Place the slices on top of the potato salad. Sprinkle paprika on top of the eggs and salad.

Tips & Warnings
  • Add sugar, salt and pepper to taste.
