How to Make Apple Butter!

This butter makes a tasty spread or topping. It is also a very welcome gift.

Instructions

Things You'll Need:

  • 8 pounds of juicy,tart apples
  • 6 cups of cider
  • 2 cups dark brown or demerara sugar
  • 3 teaspoons cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon cloves
  • 2 lemons, grated rind and juice
  1. Step 1

    Sterilize about 10 6-ounce jars. Leave in hot water.

    Chop whole apples.

    In a heavy saucepan, place the apples and cider.

    Cook, covered, over medium heat until the apples are soft.

    Force the mixture through a sieve.

  2. Step 2

    To the apple mixture, add all the remaining ingredients.

    Return to heat and cook, stirring until the sugar is dissolved. Taste and adjust seasonings.

  3. Step 3

    Continue cooking over low heat, stirring constantly, until the mixture is thick and smooth.

    This is a slow process so be patient.

    To test for doneness, pour a little of the mixture on a cold dish. If no liquid oozes out at the sides of the butter, it is done.

  4. Step 4

    Pour into the hot, sterilized jars. Seal.

    Cool and store in a cool place.

    Enjoy!

on 12/18/2008 I used a receipe for apple butter that contained applesauce and its not thick enough. Is there anything I can do to thicken it up?
