How to Make Healthy Carrot Muffins

Add vegetables to your kid's diet by baking these moist carrot muffins. These make great snacks to add to your child's lunch box.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teas. salt
  • 1 teas. cinnamon
  • 1/4 teas. cloves
  • 1/4 teas. ginger
  • 1/4 teas. nutmeg
  • 1 1/2 cups oil
  • 4 eggs
  • 3 cups grated carrots
  • 1 teas. vanilla
  • 1 cup chopped nuts
  1. Step 1

    In large bowl, add the flour, sugar, brown sugar, salt and spices. Mix well with spoon.

  2. Step 2

    Add 4 beaten eggs, vanilla and oil to the batter. Blend well using wooden spoon.

  3. Step 3

    Blend in the grated carrots and nuts.

  4. Step 4

    Prepare the muffin pan by spraying with a cooking spray. Pour the batter into the pan and bake in a pre heated 350 degree oven for 20 minutes.

  5. Step 5

    Remove and cool on a wire cooling rack before serving or storing.

Tips & Warnings
  • Use the toothpick test to check if it is completely baked.
  • Muffins may be frozen in a freezer bag until needed.
