How to Make Easy Southern Style Potato Salad

  • 3lbs of red potatoes
  • 1 1/2 cups of mayonnaise
  • 1 tsp of mustard
  • 1/4 cup of sweet relish
  • chopped sweet onions
  • salt
  • pepper

      In a large bowl, mix these ingredients: 1 1/2 cups of mayonnaise, 1 tsp of mustard, 1/4 cup of sweet relish, 1 rounded TBSP of diced sweet onions, 1/2 tsp salt, and 1/4 tsp pepper. Keep mixture refrigerated until you are ready to add potatoes.

      Peel the potatoes and cut them into one inch squares. Cut them as close to the same size as possible so that they will cook evenly. Put potatoes in large pot with cold water. Bring to a rolling boil on high heat, reduce heat to medium and let cook until tender. Cook the potatoes until they are just done, do not over cook them or they will fall apart while stirring the potato salad.

      When potatoes are finished, drain them and let them cool a little bit. After they cool a little, add them to the mixture of ingredients you made in the large bowl. With a large plastic spoon, mix ingredients together. Refrigerate until ready to eat. Enjoy!

Tips & Warnings

  • Add a couple of hard boiled eggs if desired.

  • To make potato salad creamier, add a little more mayonnaise.

  • To save time cutting onions, grate them lightly with a grater.

  • Put the mixture of ingredients in the freezer for a few minutes to help make the potato salad get cold faster.

  • Cool the potatoes by lightly sprinkling them with cold water while they are being drained.

  • Add a little paprika to the top of potato salad when finished if desired.

  • Drain potatoes as soon as they are done, do not leave them in the water or they will get too soft.
