Keep your cool in the summer with this cold vegetable side dish that’s quick and easy to prepare – no cooking! This dish works well for picnics, served with cold sandwiches or chicken.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 can black-eyed peas, drained and rinsed
  • 1 can diced tomatoes with green pepper and onion
  • 1 can green beans, drained
  • 1/2 cup crumbled feta cheese
Step1
Combine all vegetables in a container with a cover (e.g., casserole).
Step2
Stir in the feta cheese. Add salt and pepper to taste. NOTE: If you only need a few servings, take out and freeze what you will not be serving before adding the feta cheese. Feta cheese can be added to the thawed vegetables when you are ready to serve them.
Step3
Refrigerate for at least one hour before serving in bowls.
