Things You'll Need:
- One baked 9 inch pie shell
- 1 cup sugar
- 1/4 cup flour
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 cups water
- 3 eggs seperated (whites are for meringue)
- 1 tablespoon butter
- 1/4 cup fresh lime juice
- grated rind of 1 lime
- Topping requires
- 3 egg whites (from above)
- 1/4 teaspoon cream of tartar
- 6 tablespoons sugar

Step 1
Beat the egg yolks until light. Set aside.
In a saucepan, combine the sugar, flour, cornstarch and salt.
Into this gradually stir the water. -
Step 2
Cook over low heat, stirring continually, until mixture is thickened.
Very, very slowly stir this mixture into the beaten egg yolks, stirring continuously so yolks blend gradually and do not lump.
Return mixture to the stove over a very low heat and, stirring gently, cook about three minutes longer. -
Step 3
Remove from heat and stir in the butter, lime juice and grated rind. Cool and pour into prepared shell.
Heat oven to 425 degrees. -
Step 4
Beat egg whites until very light. Add the cream of tartar as you continue to beat.
Slowly beat in the sugar until the meringue is stiff. spread over lime mixture, taking it right to the edge.
Bake in oven for no more than 5 minutes until top begins to brown.
Cool. Serve. enjoy!
