When we read a recipe and it calls for a cup of flour, that seems pretty straightforward. But, a cup of flour that has been filled by scooping the measuring cup into the canister of flour, is different than one that has been filled by the flour being poured into the cup. To properly measure different ingredients, follow the steps below.

  1. Step 1

    Measure liquids, use a glass or clear measuring cup with measurement markings. Place the cup on a flat surface, and bend down when you fill the cup, keeping it at eye level.

  2. Step 2

    Measure dry ingredients, use a measuring cup that is the exact measurement needed. Spoon the ingredients into the cup, and do not pack down (exception brown sugar). Run the flat backside of a knife over the top of the rim, to level and remove any excess that is heaping over the brim.

  3. Step 3

    Measure shortening, use a plastic spatula to pack into the exact size measuring cup you need. Poke the spatula into the shortening to remove air pockets, and pat down, leveling the top to match the rim of the cup.

  4. Step 4

    Measure dried herbs, pour the herbs into the specified measuring instrument, you do not need to level. It is advised to crush the herbs after measuring, to release their flavors.
