Sometimes, you just need a cupcake. And a Guinness. There's no reason you can't combine them! The the robust Guinness pairs well with cocoa, making for a rich and decadent cake.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 cup Guinness
  • 1 stick, plus 1 tbs butter, cut into chunks
  • 3/4 cup cocoa
  • 2 cups firmly packed dark brown sugar
  • 3/4 cup sour cream
  • 2 eggs
  • 1 tbs vanilla extract
  • 2 cups flour
  • 2 1/2 tsp baking soda
  • Glaze
  • 8 oz cream cheese
  • 1 1/4 cups confectioners sugar
  • 1/3 cup milk
  • 12 muffin pan
  1. Step 1

    Over medium heat in a heavy bottomed skillet, combine Guinness and butter, stirring until butter is completely melted.

  2. Step 2

    Remove from heat, and whisk in the sugar and cocoa, and set aside.

  3. Step 3

    In a bowl, whisk together the sour cream, eggs and vanilla, then slowly add to the beer mixture.

  4. Step 4

    Sift together the flour and baking soda, then gently fold into the beer batter.

  5. Step 5

    Pour into paper lined muffin tins and bake for 25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

  6. Step 6

    Allow to stand for ten minutes, then remove from the muffin tins and allow to cool completely on a rack.

  7. Step 7

    For the Glaze: With a mixer, whip cream cheese until smooth, sift in sugar, and beat. Add milk, and beat until smooth. Drizzle over cooled cupcakes.
