A publican is a pub or tavern keeper or owner in the United Kingdom. They serve beverages and basic pub food and are responsible for keeping a comfortable and friendly atmosphere in the pub. A successful publican will also learn the names of his customers and remember what drinks the regulars prefer. On the management side, a publican is responsible for arranging for the receiving of all deliveries, maintaining health standards and certificates, and managing wages and human resources.
