How to Make Watermelon Crab Cups

Watermelon and crab may sound like a strange combination, but the juicy sweetness of the watermelon is a perfect complement to the rich and savory crab filling. Watermelon crab cups delicious, and their lovely appearance makes them a perfect choice for a summer midmorning brunch.

Instructions

Things You'll Need:

  • Halved seedless watermelon
  • 4 oz. mayonnaise
  • 4 oz. celery, chopped
  • 4 oz. sweet pickle relish
  • 1 tsp. fresh dill, minced
  • Salt (optional)
  • 4 oz. green onions, chopped
  • 2 eggs, boiled and chopped
  • 16 oz. cooked crab meat
  1. Step 1

    Remove large chunks from the watermelon and cut them into cylindrical shapes approximately 3 inches high and 2 inches wide. Carefully scoop out the center of the watermelon cylinders to form your cups. The scooped-out watermelon can be refrigerated and used for snacking.

  2. Step 2

    Put the watermelon cups on a layer of paper towels while you prepare the crab filling.

  3. Step 3

    Place the mayonnaise in a mixing bowl and add the chopped celery, sweet pickle relish, dill, optional salt, chopped green onions and eggs.

  4. Step 4

    Fold the crab meat into the mixture and stir to mix thoroughly.

  5. Step 5

    Fill each watermelon cup with the crab meat mixture, place them on individual serving plates, garnish them with a sprig of dill and serve them immediately.

Tips & Warnings
  • Your watermelon cups can be prepared in advance and chilled. Just put them on a large plate or tray and cover them loosely with plastic wrap before placing them in the refrigerator.
