Things You'll Need:
- 2 cups sugar
- 2 teaspoons of cornstarch
- 1 cup light corn syrup
- 3/4 cup water
- 2 t tbs. butter
- 1 teaspoons of salt
- 3 drops of food coloring
- 1/4 to 1 teaspoons of flavoring (Lemon, cocoa, vanilla, mint or lemon works well)
- Liquid Measuring cup
- Measuring spoons
- Cookie sheet
- Large saucepan
- Wooden spoon
- Candy thermometer
- Pastry brush
- Oil for hands and knife
- Waxed paper

Step 1
Pour cornstarch and sugar in the saucepan.

Step 2
Stir in salt, water, corn syrup, glycerin, and butter with a wooden spoon.

Heat mixture over medium heat and stir until mixture comes to a boil. Do not discontinue stirring until it comes to boil.

Step 4
Stir the taffy mixture continuously until it comes to a boil. Once it begins to boil, allow it cook without stirring, until the temperature reaches 270 degrees F, which is the soft crack stage in candy making.

Step 5
When the taffy mixture 270 degrees,dip a pastry brush in warm water and wash down pan sides while the syrup is cooking to ensure that all your mixture is combined properly and without crystallization.

Step 6
Remove taffy from heat.

Step 7
Stir flavoring in before taffy begins to cool.

Step 8
Pour the salt water taffy onto a greased cookie sheet.

Step 9
Allow to cool enough to be able to handle, then pull and separate. Look at resource box below to learn how to pull taffy.

on 9/13/2008 Thank you SO MUCH! I love to cook and my daughter loves to learn!!! I am from New Orleans but live a little distance away, so we don't get to eat the "Roman Candy" salt water taffy (he's sold taffy in NOLA so long it has to be a Father, Son & Grandson business).
