How to make a Quinoa Salad

Okay, I didn't know what it was either. Surfed the net and found it to be a very healthy grain used by Native American Indians. Super Food they call it! Super good and easy I call it!

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 C quinoa
  • 2 Tbl lemon juice
  • 2 Tbl olive oil
  • salt & pepper
  • asparagus, cut 1” pieces
  • 6-10 olives, chopped
  • 1 tomato, chopped
  • ¼ C goat cheese
  • ¼ C chopped parsley
  1. Step 1

    Bring 8 cups of salted water to a boil. Add quinoa and cook until soft, 10-12 minutes.

  2. Step 2

    Drain and rinse cooked quinoa with cold water and drain again. Put in a bowl.

  3. Step 3

    Add lemon juice, olive oil, salt & pepper. Add asparagus, olives, & tomato.

  4. Step 4

    Add asparagus, olives, & tomato. Stir to combine. Top with goat cheese and parsley.

Tips & Warnings
  • Good at any temperature, making this a great picnic/travel food.
