How to make Yummy Asian Noodles (Udon)

I love to explore the asian markets (long live the great Uwagimaya) and find new things to cook with. I developed this recipe after watching too many Anthony Bourdain episodes of travels to Asia.... He makes me so hungry!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 Cup Bonito Flavored
  • Soup Base (liquid)
  • 7 Cups Water
  • 3 Tbl. Soy Sauce
  • 2 Cups fresh mushrooms, sliced (or 1 Cup re-hydrated dry Shitake)
  • 2 stalks green onions sliced
  • 2 Baby Bok Choy, cut into bite size chunks
  • ¼ Red Pepper, diced
  • Firm Tofu, diced
  • 1 handful of baby spinach leaves
  • Fresh Udon noodles
  • optional: red chili paste
  1. Step 1

    Add the bonito (soup base), water & soy to large pot and simmer 1 minute.

  2. Step 2

    Add chopped vegetables to soup base and simmer 1-2 minutes.
    Turn off heat.

  3. Step 3

    In a separate small pot bring 2 Cups water to boil.
    Add fresh Udon noodles and simmer 3 minutes. Drain.

  4. Step 4

    Place Udon in a serving bowl; Ladle soup & vegetables over noodles.
    Top with Red Chili paste.

on 9/10/2008 Sounds good! I have never tried tofu. Can't seem to bring myself to do it. So you know I will be omitting that one little ingredient. I know I should be more open minded but just can't when it comes to that stuff! Shhh! Don't tell my kids though!
