Things You'll Need:
- 3 tablespoons of butter
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup chopped turnips
- 1/2 cup chopped celery
- 1 1/2 cups diced potatoes
- 4 cups vegetable or meat broth (or 1/2 water and 1/2 broth)
- 1 tablespoon chopped parsley
- salt and pepper to taste

Step 1
Saute the carrot, turnip, celery and onion, in the butter, until all vegetables are lightly browned.
Add the potatoes and stir briefly. -
Step 2
Add the stock, and simmer gently for about 30 minutes, or until all vegetables are tender.
Salt and pepper to taste. -
Step 3
Serve piping hot garnished with parsley.
