How to Make A Simple Vegetable Soup.

This is a quick soup, easily adaptable to any vegetables you have on hand

Difficulty: Easy
Instructions

Things You'll Need:

  • 3 tablespoons of butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup chopped turnips
  • 1/2 cup chopped celery
  • 1 1/2 cups diced potatoes
  • 4 cups vegetable or meat broth (or 1/2 water and 1/2 broth)
  • 1 tablespoon chopped parsley
  • salt and pepper to taste
  1. Step 1

    Saute the carrot, turnip, celery and onion, in the butter, until all vegetables are lightly browned.

    Add the potatoes and stir briefly.

  2. Step 2

    Add the stock, and simmer gently for about 30 minutes, or until all vegetables are tender.

    Salt and pepper to taste.

  3. Step 3

    Serve piping hot garnished with parsley.

    Enjoy!
