This is a cold soup, great for the summer months and it is quite easy to make and not too time consuming, except for the last step which is to wait for an hour before you can serve it. There are several ingredients in the soup and it is quite fun to prepare and delicious to eat, and even if it is great for summer, you can still sample it all year round really.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 cup tomato juice
  • 1 beef bouillon cube
  • 1 chopped tomato
  • 1/4 cup chopped celery
  • 2 tablespoons chopped green (or red) pepper
  • 2 tablespoons chopped onion
  • 2 tablespoons wine vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon chopped cilantro
  • 1 teaspoon chopped parsley
  • 1 garlic clove
  1. Step 1

The first step is to heat the tomato juice with the beef bouillon until it completely dissolves.

  2. Step 2

The next step is to add all the ingredients (the chopped tomato, chopped celery, chopped green and red pepper, the onion, the cilantro and parsley, the wine vinegar and garlic clove) and stir on medium heat for ten to fifteen minutes.

  3. Step 3

The last step is to let the soup chill for about 1 hour before you are able to serve it to your dinner guests.
