- pearl barley or wild barley
- water
- lemon peel
- stoned raisens
- liquorice root

In certain parts of Europe pot barley was boiled in buttermilk and sweetened with treacle. It was a common dish. In England the cereal was boiled with raisins, currants and prunes to make a gruel broth. There is a richer version with rosewater, white wine, butter and sugar and was said to be popular with Oliver Cromwell.

Step 2
Making lemon barley water - an old recipe
Wash the barley and use the proprtion of one ounce to two pints of water. Boil it up for a few minutes in a small amount of water. Strain then add fresh water (This will make the drink lighter and give it a better colour) Boil the mixture down by 50%. -
Step 3
Add lemon peel and sugar if needed. You might prefer to add one ounce of stoned raisins to every pint with one quarter of an ounce of liquorice root and 3 or 4 figs. The lemon mixture is a bit lighter to drink.
