Great way to make meatless stuffed peppers! Great and easy dinner for the family.

Instructions

Things You'll Need:

  • 2-4 red, yellow or orange peppers
  • cook 2 cup of rice in chicken broth
  • 1/3 cup of chopped red onion
  • 3 cups of mixed veggies,(steemed cooked) stir fry style mix
  • 4 medium garlic cloves, chopped
  • 1 can of beens, any kind you like, 15 oz can
  1. Step 1

    You can grill this or bake it. If baking set the oven to 350 degrees. Place the aluminum foil in the pan. On he grill, the same temperature.

  2. Step 2

    Cook rice in chicken broth or add chicken bouillon. One pack per cup if using the packs.

  3. Step 3

    Wash the peppers, cut the tops of the peppers off. Take out the seeds.

  4. Step 4

    Steam cook the veggies till almost done.
    Get the can of beens and rinse them off really good from the liquid that they are in. Set aside.

  5. Step 5

    Once the rice and veggies are ready, add onion, garlic, beans and veggies to the rice. Mix well.

  6. Step 6

    Fill in the peppers with the mixture. Place the top of the pepper back on. Place on a baking pan covered with aluminum foil.
    Bake for about 20-30 min or until the peppers are cooked.

Tips & Warnings
  • You can add other veggies in to the rice if you like.
  • If you like it spicy add chopped jalapenos to the mixture.
  • Adjust the heat when needed.
