How to Make Your Own Cajun Seasoning Mix

Creole and Cajun are very similar spice combinations with interesting differences. Most Cajun dishes start with what they call a “holy trinity” - bell peppers, onions and celery. Parsley, bay leaves, and scallions are often added fresh to a recipe. Gumbo, another name for okra, is often the main thickener. Filé powder is made from powdered sassafras leaves and gives it that special something.

Instructions

Things You'll Need:

  • Saved spice bottles or jars - washed and well dried, with the labels removed
  • A Sharpie pen - color of your choice
  • A sticky label you can put on the spice bottle to write on
  • Various spices as listed below
  1. Step 1

    Here are the basics for making your own Cajun Seasoning Mix:
    • 1/4 cup salt – regular, sea salt or kosher
    • 1/4 cup chili powder
    • 2 teaspoons ground celery seed
    • 1/3 cup paprika
    • 2 Tablespoons sugar
    • 1 Tablespoon onion powder
    • 2 Tablespoon garlic powder
    • 1 Tablespoon black pepper
    • 1 Tablespoon dried basil
    • 1 Tablespoon dried oregano
    • 1 Tablespoon ground rosemary
    • 1 teaspoon cayenne pepper
    • 2 teaspoons dried thyme
    • 1/4 teaspoon cumin
    • 1/4 turmeric
    • 1/4 curry powder
    • For extra hottttt – add an additional 1 Tablespoon cayenne pepper and 1/2 Tablespoon jalapeno pepper

  2. Step 2

    As always, mix all the spices up in a bowl and then spoon into a spice jar that you've saved. If you don't have any saved, spoon the spices into a zip bag or container that suits your spice use. Label the bottle or jar and store like any other spice.

  3. Step 3

    Use this blend on just about everything that you would use a store bought jar of Cajun Seasonings on. Add zing to bland casseroles. Can be added to the flour dredge for spicy chicken or pork chops. Use this on tater tots too!

Tips & Warnings
  • Less is more is the best guide until you "know" how your blend tastes.
  • Sprinkle your resulting seasoning mix into the dish a little at a time - you can put in but you can't take out.
  • If you add too much salt to a stew or soup, adding cut raw potatoes and letting them cook for a while will absorb some of the salt. Remove potatoes before they break up.
  • Spiciness is a matter of taste - so don't just try to blast your tongue, or your guests' tongues out of their mouths!
