How to Make Nutritious Apricot-Nut Bars!

A nice variety of bar, rich with the flavour of fruit and nuts.

Instructions

Things You'll Need:

  • 1 cup of dried apricots
  • 1/2 cup soft butter
  • 2 tablespoons white sugar
  • 1 cup flour
  • 1/3 cup more flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup brown sugar
  • 2 beaten eggs
  • 1/2 teaspoon vanilla
  • 1 cup chopped nuts
  • a dusting of icing sugar(optional)
  1. Step 1

    Place apricots in water and boil for 10 minutes. Drain off water. When apricots are cooled, chop into fine pieces.

    Heat oven to 350 degrees. Butter an 8" square baking pan.

    Chop 1/4 of your nuts very fine.

  2. Step 2

    Mix together the butter, white sugar and 1 cup of flour. Add the 1/4 cup finely chopped nuts and crumble ingredients between the finger tips until it resembles coarse bread crumbs.

    Press this mixture firmly into the buttered pan and bake for about 20 minutes until it is slightly browned.

  3. Step 3

    Mix together the remaining flour, baking powder and salt. In another bowl beat together the eggs and brown sugar. Add the flour mixture to the eggs and blend well.

    Over the top of this mixture, sprinkle the vanilla, nuts and apricots. Mix well and spread over baked crust.

  4. Step 4

    Bake for approximately 30 minutes. Cool in the pan on a rack and cut into bars. Sprinkle with icing sugar if you wish. Enjoy!
