How to Make Layered Coconut Squares!

This is a tasty square with coconut and walnuts atop pastry-like base.

Instructions

Things You'll Need:

  • 1/2 cup butter
  • 1/3 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1 egg yolk
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1 tablespoon more of flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 eggs
  • another 1/2 teaspoon vanilla
  • 1/2 cup dark corn syrup
  • 3/4 cups flaked coconut
  • 1 cup chopped walnuts
  1. Step 1

    Heat oven to 425 degrees. Butter a 9" square pan.

    Cream shortening and confectioners' sugar until smooth.
    Add the 1/2 teaspoon vanilla and the egg yolk. Blend until smooth.

    Slowly blend in the 1 cup flour and mix until smooth. Press this mixture into the buttered pan. Bake for 10 minutes. Remove pan from oven and reduce the heat to 350 degrees.

  2. Step 2

    In a bowl mix together the brown sugar, the tablespoon of flour, the baking powder and the salt. Blend well.

    Beat in the two eggs, the second 1/2 teaspoon vanilla, corn syrup, coconut and walnuts.

  3. Step 3

    Spread the new mixture evenly over the crust.

    Return to oven and bake at 350 degrees for approximately 25 minutes. Cool in pan on rack. Enjoy!
