Vegan Chocolate Amaretto Pie

This is an easy, delicious, vegan pie that requires no cooking and very little prep time.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 12oz package chocolate chips
  • 1/3 cup amaretto liquor
  • 1 tsp vanilla
  • 1 Tbl maple syrup (or agave syrup)
  • 1 pkg/block silken tofu
  • 1 chocolate cookie crust
  1. Step 1

    Melt the chocolate chips with the amaretto liquor and mix together.

  2. Step 2

    Add the vanilla and maple syrup and mix together.

  3. Step 3

    Blend in the tofu. You'll need to use a hand blender, blender, or food processor to get it to mix together properly. Blend until creamy and you can no longer see any pieces of tofu.

  4. Step 4

    Pour into the pie crust and let chill overnight. If it lasts beyond the next day, you'll see that it firms up to the perfect consistency by the following day.

Tips & Warnings
  • You may be wondering if it's worth buying an entire bottle of amaretto for just a 11/3 of a cup for a pie. IT IS! Once you taste this you will be making it pretty often.
  • To melt the chocolate chips you can use quite a few methods: On low in a microwave(check often), in a bowl floating in a pan of hot water, or using a double boiler. I use the microwave method.
  • I have found that a hand mixer just doesn't mix it well enough. I always ended up with a white flecked pie when I used one.
